Delicious Fall Recipe: Apple, Goat Cheese, and Pecan Pizza

Place a prepared 1-pound six-grain pizza crust on a baking sheet coated in cooking spray, and top with 3 cups thinly sliced and evenly arranged Fuji apple (about 8 ounces). Sprinkle 1 cup (4 ounces) crumbled goat or feta cheese and 2 teaspoons chopped fresh thyme evenly over cheese. Bake at 450º for 8 minutes or until cheese melts and starts to brown.
Whisk 1 tablespoon extra virgin olive oil, 2 teaspoons Dijon mustard, 1 teaspoon fresh lemon juice, and 1 1/2 teaspoons honey together in a medium bowl. Add 2 cups baby arugula, and toss gently to coat.
Sprinkle 3 tablespoons chopped, toasted pecans evenly over pizza followed by the arugula mixture.
