Recipe of the Month: Pumpkin Spice Cookies

According to Paula Deen, contributing to the Food Network, this simple recipe should take no more than 40 minutes, including prep time, to complete. These ingredients create around 30 cookies for your family and friends.


1 cup butter

1 cup granulated sugar

2 large eggs

1 tablespoon vanilla extract

1/2 teaspoon rum extract

3 1/4 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon pumpkin pie spice

1/2 teaspoon salt

Cinnamon Cream Cheese frosting


Line 2 baking sheets with parchment paper, while preheating your oven to 350 degrees.

Combine butter and granulated sugar in a large bowl, using your mixer at medium speed.

Add the eggs, vanilla and rum extract, beating until combined. In another bowl, mix flour, baking powder, pumpkin pie spice and salt. Gradually add flour mixture to the butter mixture, beating until it combines. Chill the dough for 1 hour after wrapping it in plastic wrap.

Roll dough to 1/4-inch thickness. Use a 4-inch pumpkin cookie cutter to cut your cookies. Bake until edges are lightly browned, about 8 to 10 minutes. Remove and cool on wire racks. Spread Cinnamon Cream Cheese frosting on top.
